A Ramos Gin Fizz is 45 ml (42.3 g) Gin, 15 ml (15.5 g) Fresh Lemon Juice, 15 ml (15.5 g) Fresh Lime Juice, 30 ml (30 g) Cream, 20 ml (22.2 g) Sugar Syrup, 30 ml (31.2 g) Egg White and 30 ml (30 g) Soda Water, shaken and served in a highball glass. How to make a Ramos Gin Fizz

  1. Set your highball glass on the scale (or on the PourPilot coaster) and zero it. Every measurement below is given in millilitres and in grams, so you can use either.
  2. Add Gin, Fresh Lemon Juice, Fresh Lime Juice, Cream, Sugar Syrup and Egg White to a shaker with no ice and dry-shake hard for 10 seconds to build the foam.
  3. Add ice and shake again for 12–15 seconds until the tin is painfully cold.
  4. Double-strain into a chilled highball glass.
  5. Top with Soda Water and give it one gentle lift with a bar spoon — never stir the bubbles out.
